Mikikicchan Japanese Carving Knife Set — 6 Pieces
Set of 6 Japanese carving knives made from aogami steel (blue steel), a high-durability alloy with tungsten and chromium that improves wear resistance, extends edge retention and adds flexibility. The rounded handle reduces fatigue during extended use.
Maintenance: remove shavings and dust after each use and protect with camellia oil or rust inhibitor. Avoid contact with acids; if this occurs, clean immediately.
The 6 knives
Yoko: standard carving shape, versatile for wood, bamboo and paper. Ideal for hard-to-reach areas such as the neck heel.
Hira: flat upper edge, designed for carving flat surfaces and tight spaces.
Ken: double-edged (left and right), ambidextrous. Suitable for areas with height and width restrictions. The upper edge is more delicate to sharpen.
Kuri: slender, pointed shape, specialised for precision hollowing in small areas.
Mikaduki: arched blade, ideal for working round bars and hollowing.
Migi: standard design for right-handed users ("migi" means "right"), comfortable for long carving sessions.
